19 Ways To Use Your Zucchini

Summer bounty means the zucchini are abundant! So abundant sometimes, we have to look for ways to use them up! There are hundreds of recipes using zucchini. Here’s a list of my favorite ways to use this exquisite vegetable all summer long!
19 Ways To Use Your Zukes!
- The old fashioned ‘dip in batter and fry’ is still the best (to a Southern lady, that is!)
- Saute slices with butter and herbs. Add a tablespoon of chicken stock.
- Toss slices in oil, then add salt, garlic powder or minced garlic, and pepper. Roast in the oven at about 400 degrees for 15-20 minutes until nicely tender and crispy.
- Steam thin slices with seasonings.
- Boil lightly in chicken broth with a heavy mix of garlic, parsley, oregano, salt and pepper.
- Slice in long strips or ribbons and add to fresh pasta sauce in a cast iron skillet. Quick one pan meal!
- Julienne zucchini and yellow squash with purple onion, cherry tomatoes and basil, then drizzle a fruit vinaigrette over the vegetables for a great summer salad. Garnish with grated hard cheese and fresh cracked pepper.
- Raw slices make great crudites for delicious vegetable dips and creamy sauces.
- Pickles! Make a quick sweet vinegar brine with 1 cup cider vinegar, ½ cup water, 1 teaspoon each of garlic, mustard seed, celery seed and cloves. Pour over a jar full of zuke slices and refrigerate. Add peppers or other vegetables if you like.
- Slice in half lengthwise, then scoop out seeds. Stuff with a tomato rice or bread stuffing of your choice. Add cheese, herbs, beans or meat to the stuffing! Bake at 375 for 30
- Dice or grate raw zucchini into bread stuffing for other foods.
- Need I say more? Zucchini bread is moist and so flavorful! Try substituting zucchini in a banana bread recipe.
- Grated zucchini added to cake mix makes it super moist and flavorful too.
- Dehydrate slices or chunks. Slice and then cube to add to soup mixes.
- Dehydrate with carrots, celery, onion, and basic herbs, then grind for vegetable bouillon or seasoning mixes of your own.
- Great on grilled kababs with a vinegrette marinade!
- Add diced zucchini to rice dishes.
- Add to your smoothie. Just a few slices add nutrients and body.
- Zucchini fritters! Grate one zucchini, add some diced onion and other veggies if you like. Add an egg, enough flour to make a thick batter. Fry in a cast iron skillet, garnish with salt and pepper.
